I Love You Single Malt is a splendid testament to the opulence of the Pedro Ximénez (PX) sherry, illustrating the profound influence of PX casks on whiskey and underscoring the significance of a well-chosen name. This single malt Irish whiskey, crafted from 100% malted barley, undergoes a finishing period of no less than nine months in PX casks before being bottled at 46% ABV, without any chill-filtration or colouring. The nose reveals a rich sherry presence with notes of dried fruit, sticky cherries, orange peel, and toasted sugar. The palate is viscous and delivers flavours of oily walnut, golden raisins, leather, dark chocolate, and zesty citrus. The finish is drying, accompanied by woody spices and dark fruit undertones.
